Mini Lemon Tarts:

These minn lemon tarts have a lemon filling that’s made with lemon juice and lemon zest in a mini tart crust.

Ingredients:

Homemade Mini Tart Crust:

• 2 cups Self-Rising Flour

• 1/2 tsp. Salt

• 1/2 cup Granulated Sugar

• 1 cup Unsalted Butter, softened

Lemon Filling:

• 2 tbsp. Self-Rising Flour

• 1 cup Granulated Sugar

• 1/4 cup Fresh Lemon Juice from one lemon

• 1 tbsp. Fresh Lemon Zest from one lemon

• 3 Eggs

Instructions:

1. Preheat oven to 350 degrees and greased 4 mini tarts ramekins with cooking spray.

Mini Tart Crust:

1. In a mixing bowl, add in the flour, salt, sugar and butter, mix well until combined in a ball.

2.Divide the crust dough into 4 portions, press the dough into tart pans.

Make the Lemon Filling:

1. In a bowl of stand mixer, add in flour, sugar, lemon zest and lemon juice, eggs, beat well until combined.

Assemble:

1. Pour the filling into tart pans and bake for 35 minutes and cool for 10 minutes until. Garnish with whipping cream, if desired.
