Blueberry Buckle:

This blueberry cake is made with fresh blueberries with cinnamon and sugar topping is delicious dessert.

Ingredients:

Cake:

• 2 cups Self-Rising Flour

• 1 cup Granulated Sugar

• 1/2 tsp. Salt

• 1 tsp. Vanilla Extract

• 1 cup Milk

• 1/2 cup Unsalted Butter, softened

• 2 Eggs

• 3 cups Fresh Blueberries

Topping:

• 1 cup Self-Rising Flour

• 1 cup Granulated Sugar

• 1 tsp. Ground Cinnamon

• 2/4 cup Cold Butter, cut into cubes

Instructions:

1. Preheat oven to 350 degrees and greased a baking pan with cooking spray.

2. In a bowl of stand mixer, add in the flour, salt, sugar, mix well.

3. Add in butter, vanilla extract and eggs. Stir in blueberries, beat well until combined. Pour in baking pan.

4. In a mixing bowl, add flour, sugar, cinnamon and butter, mix well. Spread on top of buckle.

5. Bake for 35 minutes until light golden brown and let cool for 10 minutes before serving.
