
Ingredients:
• 2 cups Self-Rising Flour
• 1/2 tsp. Salt
• 1 cup Granulated Sugar
• 2/4 cup Unsweetened Cocoa Powder
• 1 tsp. Vanilla Extract
• 1/4 cup Powdered Sugar
• 3/4 cup Heavy Cream
• 4 Eggs
• 1/3 cup Dark Chocolate, chopped
• 1/3 cup Fresh Cherries, pitted
• 1/4 cup Fresh Raspberries
Garnish: chocolate shavings and fresh cherries and fresh raspberries
Instructions:
1. Preheat oven to 350 degrees and line a baking pan with parchment paper.
2. In a bowl of stand mixer, add in flour, salt, sugar, cocoa powder and granulated sugar, eggs, beat well.
3. Pour the batter into greased baking pan and bake for 35 minutes until light golden. Let it cool for 10 minutes.
4. In a mixing bowl, whisk together the powdered sugar and heavy cream, vanilla extract until stiff peaks form.
5. Spread the cake with heavy cream mixture evenly and then roll the cake into a loaf.
6. Garnish the cake with whipped cream and chocolate, cherries and raspberries. Let the cake fridge for about 1 hour before serving.
