Southern Collard Greens

Collard Greens are a southern side dish to serve with cornbread.

How To Prepare Collard Greens Before Cooking:

• 1. Wash the greens by start washing them in cold water to remove any sand or grit.

• 2. Remove the stems by slicing along each side with a sharp knife and remove the stems around the stalk.

• 3. Cut the stems in ribbons on cutting board and crosswise into thick ribbons.

What Kind of Meat to use cook Collard Greens?

• Use bacon or smoked ham hock to cook in the greens


Ingredients:

• 2 Bunches of Collard Greens

• 1 large Smoked Ham Hock or 6 sliced chopped bacon

• 2 tbsp. Vegetable Oil or Bacon Grease

• 1 tbsp. Vinegar

• 12 cup Water

• Salt and Black Pepper to taste

• 1/4 tsp. Red Pepper Flakes

Instructions:

• In a large stockpot, bring the water to a boil and add in the ham hock or bacon, let it cook for 2 hours.

• Go ahead prepare your collard greens for cooking. Wash and clean, cut off the stems, cut.

• Take the ham hock out of the pot and side it aside for later.

• Add in the greens and salt, black pepper and red pepper flakes, let it cook for 1 1/2 hours until greens are tender. Shred the meat off the ham hock bone and place in the cooked greens.

• Serve greens on plate and top with vinger.
