Chocolate Elcairs

These Chocolate Eclairs are filled with chocolate pastry cream in a eclairs with white chocolate icing and drizzle in dark chocolate sauce.

Ingredients:

Elcairs:

• 1 cup Bread Flour

• 1 cup Water

• 1 tbsp. Granulated Sugar

• 1/2 tsp. Salt

• 1/2 cup Unsalted Butter

• 4 Eggs, at room temperature

Chocolate Pastry Cream:

• 1 tbsp. All-Purpose Flour

• 2 tbsp. Granulated Sugar

• 2 tbsp. Cocoa Powder

• 3 tbsp. Cornstarch

• 1 cup Chopped Dark Chocolate

• 2 cups Milk

• 1/3 cup Unsalted Butter, cubed

• 6 Egg Yolks

White Chocolate Frosting:

• 1 cup White Chocolate Chips

• 2 tbsp. Butter

• 1 1/2 cups Confectioners’ Sugar

• 2 tbsp Hot Water

Chocolate Sauce:

• 2/4 cup Chocolate Chips

• 1/4 cup Heavy Cream

Instructions:

Preheat oven to 400 degrees and greased a baking sheet with cooking spray.

Elcairs:

In a saucepan,water, butter and salt to a boil. Stir in the bread flour until smooth ball forms. Take it over the heat and let it set for 4 minutes.

Now add in the eggs one at time, beating well and until smooth, shiny

Using a piping bag with large round tip, pipe out the dough into strips on greased baking sheet.

Bake for 45 minutes until light golden brown and remove from oven let it cool for 10 minutes in baking sheet. Then transfer to wire rack to cool completely. Split the elcairs in half and use a spoon the remove the breaded inside.

White Chocolate Pastry Cream:

In a saucepan, add in the chocolate, milk and butter, stir until chocolate is melted. Add in the cornstarch, sugar, cocoa powder and flour, stir and bring to a boil.

Turn the heat to low temperature and add in the egg yolks one at time, stirring occasionally until smooth, take off heat and let cool for 10 minutes .

Spread the chocolate in the bottom eclair and top off with another elcair.

White Chocolate Frosting:

In a saucepan, add in the white chocolate chips, hot water, butter and sugar, stir occasionally until smooth. Let it cool for 5 minutes. Spread on top of the elcair.

Chocolate Sauce:

In a microwave safe bowl, add in white chocolate and heavy cream, stirring occasionally and microwave for 1 1/2 minutes until smooth.

Use a spoon and drizzle on top of white chocolate frosting.
