Carrot Sheet Cake

The best carrot sheet cake is moist and flavored with carrots cinnamon and homemade cream cheese frosting.

Ingredients:

• 2 cups Self Rising Flour

• 1/2 tsp. Salt

• 2 cups Granulated Sugar

• 1 tsp. Cinnamon

• 3 cups Grated Carrots

• 1 tsp. Vanilla Extract

• 4 Eggs

• 1/4 cup Vegetable Oil

Cream Cheese Frosting:

• 1 Stick Unsalted Butter, softened

• 3 cup Powdered Sugar

• 2 tsp. Vanilla Extract

• Chopped Pecans

Instructions:

Preheat oven to 350 degrees and greased a baking sheet with cooking spray.

In a bowl of stand mixer, add in the flour, salt and cinnamon, sugar, beat well.

Add in the vanilla extract, oil and carrots, eggs one at time, beat well combined.

Pour the cake batter into a greased baking sheet and bake for 45 minutes. Let it cool for 10 minutes before frosting.

Make the frosting, mix the frosting ingredients until light and fluffy.

Spread the frosting evenly on the cake and serve.
