
Ingredients:
• 8oz. Block of Cream Cheese, softened
• 4 tbsp. Butter, at room temperature
• 1 cup Granulated Sugar
• 1 cup Sour Cream
• 1/2 tsp. Vanilla Extract
• 1 Egg
• 3 cups Fresh Blueberries
• 1 Graham Cracker Crumbs
Blueberry Sauce:
• 1 cup Fresh Blueberries
• 1 cup Sugar
• 1/2 tbsp. Cornstarch
• 1 tbsp. Vanilla Extract
• 1 tbsp. Fresh Lemon Juice from one Lemon
Instructions:
Preheat oven to 350 degrees and greased a springform pan with cooking spray.
In a bowl of stand mixer, add in the butter, cream cheese and sour cream, beat well.
Add in the vanilla extract, sugar and egg, beat well. Stir in the fresh blueberries, beat well combined.
Pour the cheesecake filling into a graham cracker crust and bake in the oven for 30 minutes. Chill in the fridge for 4 hours or
Blueberry Sauce:
In a saucepan, add in blueberries, sugar, cornstarch, vanilla extract and lemon juice, bring it to boil and stir occasionally until thickened.
Pour the blueberry sauce over the cheesecake.
