The lemon cake is made with fresh lemon juice, lemon zest, flour and granulated sugar, eggs, buttermilk, vanilla extract, beat together until combined.

What’s the lemon icing made of?

The lemon icing is only 3 ingredients and use powdered sugar, lemon juice, milk, to mix together until it’s fluffy.

How To Make Lemon Cake

Ingredients:

• 3 cups Self Rising Flour

• 1 cup Granulated Sugar

• 2 tsp. Vanilla Extract

• 1 cup Buttermilk

• 3 Eggs, at room temperature

• 1/3 cup Fresh Lemon Juice

• 1 tbsp. Lemon Zest

Icing:

• 2 cups Powdered Sugar

• 1 tbsp. Fresh Lemon Juice from one Lemon

• 1/2 cup Milk

Instructions:

Preheat oven to 350 degrees and greased two cake pans with cooking spray.

In a bowl of stand mixer, add in the flour, sugar, vanilla extract, beat well. Then add in the buttermilk and eggs one at time with lemon juice, lemon zest, beat well combined.

Pour the cake batter into two cake pans and bake for 45 minutes until toothpick inserted comes out clean. Let it cool for 10 minutes before frosting it.

Make the frosting:

In a bowl, whisk the three ingredients together until creamy and fluffy.

Assemble:

On a cake platter, lay one cake layer on it, frost it and lay second layer on top of the first layer cake, frost it.
