Lemon Cookies

These lemon cookies are soft and chewy with flavored of fresh Lemon juice and lemon zest.

What’s cookie batter made of?

The lemon cookie batter is made with flour, fresh lemon juice, lemon zest, and unsalted butter, egg yolk sugar, brown sugar. Just mix it all together in bowl and scoop on a cookie sheet to bake.

What can I use to substitute for lemon juice?

The best substitute for lemon juice is lemon extract it have the similar flavor with more tart flavor.

What makes a cookie moist and chewy?

If you’re cookies aren’t moist and chewy try putting cornstarch in the cookie dough to help keep moist while baking.


How To Make Lemon Cookies

• 1 cup Self Rising Flour

• 1 stick Unsalted Butter

• 1 Egg Yolk, at room temperature

• 3/4 cup Sugar

• 1 tsp. Brown Sugar

• 1 tbsp. Fresh Lemon Juice from one Lemon

• 2 tsp. Fresh Lemon Zest from one Lemon

Instructions:

Preheat oven to 350 degrees and greased a cookie sheet with cooking spray.

In a mixing bowl, add in the flour, sugar, and brown sugar, mix well.

Add in the lemon juice, lemon zest and egg yolk, butter, whisk it together until combined.

Use a cookie scoop, scoop up cookie batter into a greased cookie sheet. Bake for 10 minutes until light golden brown and let it cool for 10 minutes before serving and keep them in airtight container.
