
How To Make Lemon Blueberry Pound Cake:
Ingredients:
• Lemon Zest from one Lemon
• Lemon Juice from one Lemon
• 2 cups Fresh Blueberries
• 2 Eggs
• 1 stick Unsalted Butter, softened
• 1/4 cup Granulated Sugar
1/2 cup Milk
Glaze:
• 2/4 cup Confectioners’ Sugar
• 1/4 tsp. Lemon Zest from one Lemon
• 1 tbsp. Lemon Juice from one Lemon
Instructions:
Preheat oven to 350 degrees and greased a loaf pan .
In a bowl of stand mixer , cream together butter and sugar on medium speed until fluffy. Turn the mixer on low add in the cake mix, then add in half milk, beat together than add rest of milk.
Add in blueberries and lemon zest, lemon juice, mix well. Pour batter into a loaf pan.
Bake for 45 minutes until light golden brown and bubbly hot. Let it cool for 10 minutes.
In a bowl mix together all glaze ingredients and drizzle the glaze over the cake loaf. Serve.
