Potato Cakes

These potato cakes are so simple to make with few ingredients and great side dish with a weeknight meal.

What’s the ingredients?

These potato cakes are made with leftover mashed potatoes have been coated in flour onion and season with salt, black pepper.

What’s the instructions?

The way you cook potato cakes is to dust your hands with flour and shape the mixture into patties about 2cm thick. Heat a skillet with oil and cook potato cakes until lightly brown on both sides. Drain on a paperlined plate and serve with sour cream.

How To Make Potato Cakes:

· 2 cups Leftover Mashed Potatoes

· 1 Egg

1/2 cup Self-Rising Flour

· 2 tbsp. Diced Onions

· Salt and Black Pepper to taste

Instructions:

· In a mixing bowl, add in the mashed potatoes and egg, mix well. Add in the flour and onions, salt, black pepper.

· In a skillet with hot oil, scoop potato mixture with spoon and drop in hot oil. Let it cook on both sides until golden brown. Place on a paperlined plate to drain off excess greased.

· Serve on serving platter with drop of sour cream.
